Bryndza gnocchi are a Slovak national dish. They are made of potatoes, meal, egg, salt, bryndza (traditional sheep milk cheese) and bacon. Bryndzové halušky are often served with a glass of sour milk or žinčica – a sheep milk drink obtained as a by-product of the cheese making process. Raw potatoes are grated and mixed with flour, egg and salt. The batter is thrown into boiling water in small pieces and cooked. Cooked gnocchi is mixed with bryndza and covered by small roasted pieces of bacon.
