European Quartet One Melody

 

Kapustnica is a traditional thick Slovak soup made of sauerkraut. It varies according to the region and time of year when it is prepared, or if it is cooked during Lent or on a holiday. The fasting Catholic Christmas (Christmas Eve) cabbage soup is made without any meat, and is thickened with, for example, gnocchi, cream or mashed potato. A Lutheran cabbage soup at Christmas can also contain smoked meat or sausages. Dried mushrooms are a must. A Christmas cabbage soup is traditionally made at the end of the calendar year. Regional recipes for the cabbage soup differ from each other considerably. In each region, valley or even village the Christmas cabbage soup is prepared a little differently.
